Souvignier Gris, a hardy variety, tells a highly sustainable tale of this territory, in which the near-absence of treatments and the indigenous fermentations protected by natural earthenware allow the terroir to express itself in a new form. It is vertical, direct and mineral when served cold, while it appears rounder and more complex when it is only slightly chilled. At a very cold temperature, you can perceive notes of white flowers and citrus fruits, while by raising the temperature a bit you get aromas of tropical and pulpy fruits with flavours reminiscent of Golden Delicious apple, hay and balsamic herbs such as thyme.
